In a sea of minimalist, industrial-looking coffee shops, there's this pink cafe in Bulacan that looks like it came straight out of your pastel dreams. If you're into a good cup of joe combined with pretty interiors, then you should definitely check out Cafe Congreso.
The Bulacan-based cafe opened its doors on May 12, 2017 and has already been featured on Buzzfeed's list of 15 of the Most Beautifiul Pastel-Themed Restaurants Around the World. It's owned by 26-year-old entrepreneur Joseph Malaban.
In an interview with Preview, he said that his initial goal for the coffee shop was to offer a different kind of experience to his customers, and that goes for both the coffee and the overall feel of the place. "The idea was to be the first coffee shop to serve specialty coffee in our area. Also, for the interiors, unlike many specialty coffee shops in Manila that mostly play around the industrial, rustic, or minimalistic approach for their themes, I wanted to create a cafe that looked different from the usual design template. The kind that mainly features wooden-clad walls and brown tones. I instead opted for [softer] and feminine colors."
Joseph also shared that the main inspiration for the cafe's interiors was Wes Anderson’s movie, The Grand Budapest Hotel.
If you're visiting for the first time, their best-sellers include student-friendly rice bowls (Creamy Garlic Fish Fillet/Sweet and Sour Chicken/Beef Teriyaki) and their Iced Coffee selections (Iced Latte/Iced Mocha/Coffee Float).
For now, the cafe only has one branch located at Malolos, Bulacan, but Joseph has revealed to us where their next location might be—if ever they do decide to expand. "There are no definite plans yet [for] branching out, but we’re considering Pampanga and Quezon City as prospective areas where we could expand."
