According to weight loss expert Nadine Tengco, you can use her Rice Extension technique to help you balance your portions. "[It's] a food prep concept I created in my weight loss plans in 2008," she says. "It is my solution to the over-consumption of rice and the under-consumption of veggies."
Basically, this Rice Extension technique gives you a fair serving of rice and vegetables in one go. "My typical recipe has a rice to veggie ratio of 1:3 or 1:2," shares the nutritionist.
In the example below, she "extended" a half cup of rice by adding finely-chopped vegetables into the mix.
Cool, right? The serving practically doubled! And the best part is that this technique won't leave you feeling hungry. Nadine explains, "It lowers the carb and calorie count and increases fiber content." Eating more fiber keeps us full longer, so even rice lovers won't feel deprived.
