Known for his precise, quietly confident cooking, Chef Josh has spent years honing his craft in kitchens across Boracay and Manila, developing a style that’s both disciplined and deeply considered.

1. He started young—and quit culinary school twice.

Chef Josh’s culinary journey wasn’t straightforward. As Esquire Philippines recounted, he once enrolled at a small cooking school in Spain but walked away after two months, preferring to work in a kitchen over a classroom. His next shot came at the prestigious Le Manoir aux Quat’Saisons in Oxford, where he apprenticed under celebrated chef Raymond Blanc—only to leave again after four months. “It was such a culture shock,” he admitted, describing the discipline of a French brigade-style kitchen. Still, those early detours gave him the foundation for the precision and creativity he’s known for today.

2. Boracay was where he found his footing.

In 2010, after years of moving between Europe and Scandinavia, Chef Josh returned to the Philippines to open his first restaurant, Alchemy, in Boracay. It was here that he began combining the influences that would later define his food—Spanish techniques, Nordic restraint, and Filipino warmth. Alchemy thrived briefly before the island’s nightlife scene began to overshadow fine dining. But the venture led to an unexpected offer from The Bistro Group, a major player in the country’s restaurant industry, to join as corporate chef. He accepted and moved to Manila in 2012, gaining a crash course in management, operations, and scale.

3. He runs both high-end and high-volume kitchens.

Chef Josh wears multiple hats. As a corporate chef of The Bistro Group, he oversaw the menus of nearly 130 restaurants, like Fridays and Italianni’s to Buffalo Wild Wings. Yet he also helms his own smaller, more experimental concepts. His restaurants like The Test Kitchen and Helm reflect different facets of his philosophy: innovation, instinct, and precision. “It’s so easy for us chefs to replicate our own flavors under another name or another restaurant,” he told Southern Living. “I like to challenge myself more than anything else.”

4. His cooking philosophy has evolved toward simplicity.

Chef Josh once embraced modernist cooking techniques so enthusiastically that he was dubbed an “alchemist.” But, as he told GMA News, that label no longer fits. “We want food to be food,” he said. “We want it to be understandable, enjoyable, and delicious.” At Helm, this means favoring open-fire cooking over lab-like manipulation. “You have to know where the hot spots are, you have to move things around constantly,” he explained. “Those are things that a book or a spec sheet can’t teach you.” His current menus highlight produce, intuition, and patience—qualities he values more than novelty.

5. Helm’s two Michelin Stars mark both mastery and maturity.

When Helm received two Michelin Stars at the Michelin Guide Ceremony: Manila and Environs & Cebu 2026, it became the country’s first and only restaurant to earn the distinction. The recognition feels like both a culmination and a continuation for Chef Josh, whose career has spanned beachside beginnings, corporate kitchens, and now fine-dining excellence. But even with this milestone, his drive remains the same. “Even when I’m sleeping, I’m thinking about food,” he once told Esquire Philippines.
