The fruit in itself is always a treat with its tart, juicy character—but turn it into a dessert by adding in elements like cream, cake, chocolate, and so on, and you’ve got yourself a real exemplary indulgence. We’ve got our share of favorite strawberry desserts but are always out to seek and try new ones. Here we round up some recent finds and faves you’ll want to add to your must-try list.

There’s something about how strawberries, cream, and cake come together in the treat known as strawberry shortcake—the interpretation of it outside the West, anyway—and if you’re looking for a version that’s impactful yet light as air, Leonisa’s Kitchen’s got your back. Their Strawberry Shortcake (P1,500/6.5 inches) is among the best we’ve tried, what with its layers of chiffon cake that just about dissolve on the tongue; a billowy vanilla cream; and fresh strawberries for a pop of tartness.

Pie is practically everywhere these days and if it’s one with a crisp-meets-flaky crust and ingenious flavor combos you seek, BWB Kitchen’s got your back. Their latest variant—dubbed the Strawberry Lemonade Pie (P1,750/nine inches)—goes for a lush yet vibrant profile with its combo of a lemon-chiffon filling infused with fresh strawberry purée; marshmallow frosting; fresh strawberries; and edible flowers.

Looking for a sweet and creamy source of relief from the heat? Sebastian’s has got a whole slew of strawberry frozen treats to help you cool down on a fruity note. New scoops include the Strawberry Sorbet (P435) that highlights the pure, unadulterated taste of fresh strawberries with just a touch of cane sugar; the creamier (but still tangy!) Strawberry Supreme ice cream (P405); and the Chocolate-Covered Strawberries ice cream (P435) that brings in chocolate to the mix by way of a chocolate-fudge ripple and milk chocolate-dipped strawberry compote nuggets.

For a handheld treat, there’s also the Strawberry Sammie Chilly Burger (P140), which has the Strawberry Supreme ice cream in between two chewy strawberry cookies (made with real dried strawberries in the batter!). The classic brazo de mercedes turns pink in La Brazorria de Lasevil’s special Brazo de Rosas (P720)! In place of the usual custard is a strawberries-and-cream mixture hugged by a sheet of meringue in a decidedly rosy hue—and yup, you can serve it simply chilled or even freeze it for an ice cream-esque texture! Note that part of the profits for this special dessert will be donated for the production of campaign materials and donations for the birthday rally of presidential candidate Leni Robredo, happening on April 23.

5. Strawberry Shortcake Soft-Serve from Tomoni Cafe

We'll always have a spot for regular ice cream of course, but you've gotta admit there are times when lighter is the way to go and soft-serve fits the bill. Tomoni whips up versions with Japanese flair and serves them up in pints; among their latest flavors is the Strawberry Shortcake (P420), which goes for a strawberry soft-serve base peppered with vanilla sponge cake bits and lent additional brightness with their house-made strawberry puree.

6. Strawberry Pavlova from Doughmain

If you love your meal-enders on the especially light and ethereal end of the spectrum, pavlovas—with how they combine crisp-mallowy meringue, lush whipped cream, and fresh fruit—are the way to go. Over at Doughmain you can go for the Strawberry Pavlova (P1,450), which comes topped with the said fruit for tangy, juicy contrast against the richness of the cream and the airiness of the meringue.

7. Think Pink from Hello Stranger Supper Club

Private-dining venture Hello Stranger Supper Club’s earned quite the following on social media for their bakes and other pastries over the course of the pandemic. Their brioche-based bombolinis, in particular, are properly light and fluffy—and they recently came out with the Think Pink flavor variation, which has a filling of pomegranate fromage blanc crémeux and topping of fresh strawberries for a pop of color. Note that according to their order form as of writing it’s unavailable and we’re told it’ll likely be back in May; you’ll want to keep your eyes on their Instagram for updates.
