A classic centerpiece for the Mother’s Day get-together is a cake, so we at Preview tried out the newest offering from Goldilocks’ signature roster: the Signature Strawberry, just in time for the occasion. Here’s what to know before you add it to the table.
What’s in the Goldilocks Signature Strawberry Cake?
The Signature Strawberry comes in four layers of strawberry and vanilla chiffon, brushed with strawberry syrup. In between is a generous layering of vanilla buttercream, strawberry pie filling, and strawberry whipped cream.
On the table, it’s the quintessential Goldilocks cake with rounded edges and piped borders, added with a bright red glaze and whole strawberries lined up on top.
Cutting into it, the layers hold cleanly. The chiffon has that slightly springy give, and the fillings are spread evenly enough that you get a bit of each without needing to chase it across the slice. The strawberry elements come in different forms—jammy in the filling, lighter in the whipped cream, more concentrated in the glaze—so the flavor shifts slightly depending on the bite.
The Verdict
Across a few slices, what comes through most is how approachable it is. The strawberry carries a sweeter, almost candy-like profile that sits easily with the vanilla cream and soft sponge.
If you grew up on local birthday cakes, this might feel familiar. There’s that same combination of airy chiffon and sweet, creamy filling, with fruit added for a zesty contrast. Here, it’s just been handled with a bit more restraint in texture. Nothing feels overly thick or heavy, even with the multiple layers.
It also makes sense alongside coffee or tea, especially mid-afternoon when things have slowed down—like a sweet cap-off to a conversation with mom.
