Here’s how to make the Blue Diamond Almond Breeze® Mushroom and Truffle Soup at home:


2 cups Almond Breeze® Unsweetened

2 tbsp Olive oil

2 onions (finely chopped)

2 celery stalks or 1 small bunch of Chinese celery (finely chopped)

3 cups of champignon or button mushrooms (sliced)

1 tsp truffle oil

A pinch of salt and pepper

Parsley to garnish


1. Heat the olive oil and add the onion, celery, and mushrooms. Stir over medium heat until softened and browned for 2 to 3 minutes.

2. Turn down the heat to low and pour in the Almond Breeze®, (leaving a small amount to add at the end), and season with salt and pepper.

3. Keep stirring and warm through, without boiling, for a few minutes.

4. Transfer the mixture to a blender or use a hand blender. Add the truffle oil and puree on high speed until smooth and thick.

5. Serve piping hot in warm bowls and garnish with parsley. Eat by itself, with sprinkled croutons, or serve with crusty bread. Add a swirl of Almond Breeze® if desired.
