You know you’re already planning it—your Christmas get-together with friends. And truly, there’s nothing like tucking into a hearty Italian meal as you gossip catch up. (‘Tis the season to indulge, after all.)

So here’s an idea for your girl gang’s feast. Last November 21, Chef Salvatore Cuomo himself cooked a six-course meal for us, giving us the chance to sample some dishes from the holiday menu that will be available from December 1 to January 8, 2017. If pizza and pasta aren’t enough to fuel a gabfest (carbs are happy food!) the selection of Italian and French wines will. Don’t forget to save room for dessert!

Start with an assortment of antipasti. Bites of caprese, spoons of prosciutto with nori (Salvatore Cuomo & Bar was established in Japan, hence the inclusion of Asian ingredients in some dishes), and smoked-salmon-filled puff pastries are enough to whet your appetite without filling you up.

THE SECOND PLATE:

We recommend you make like the Italians (or be typically Filipino!) and eat family-style. Order these to share so you can try a bit of everything. (Note: the serving portions in these photos are the small degustacion sizes.)

Grilled Tuna with Foie Gras

Parmigiano Reggiano Cheese Risotto in Vincotto Sauce


As the saying goes, cheese makes everything so tasty. What more if it’s parmigiano reggiano? The creamy risotto’s savory cheese flavor is contrasted by the sweet balsamic reduction of the sauce.

Freshly Caught Seafood Pizza


Think of it as a deconstructed pizza where you scoop up pieces of squid and shrimp (swimming in that seafood bisque Salvatore Cuomo does so well) into ultra thin pizza crust crisps.

While this unfortunately won’t be offered on the menu this December, it deserves special mention for its pop art plating and because of how simply juicy the meat was.

Warm Chocolate Souffle with Truffle Vanilla Gelato

Imagine a chocolate lava cake with a delicious molten ganache inside, but enveloped by a soft soufflé. Now cut into it and pour Truffle Vanilla Gelato into it before taking a spoonful of it to your mouth.
