All hail the new prince of dessert customization.

About a week ago, Style Bible challenged award-winning pastry chef Miko Aspiras of Le Petit Soufflé and Scout’s Honor to create a dish we could call the “Audrey Hepburn of all desserts.” We were looking for classy, timeless, and black and white.

Now, while this may seem like an odd challenge, we knew Miko. His raw and organic style constantly compels him to innovate – so it came as no surprise when he immediately took up our challenge.

Miko started his culinary journey as a hot kitchen chef but changed tack when he won a pastry chef contest without having any previous experience (he joined it on a whim, too). Since then, he has put his talent to the test by entering dozens of competitions, both local and international, teaching him how to think on his feet and exposing him to different styles. Amazingly enough, Miko has won all the competitions he joined, maintaining a score well above the 90s every single time (this made us even more excited to see what he had in store for us).


He made us two desserts. When we asked Miko how he came up them, he said he chose the most fundamental aspects of Audrey Hepburn’s image and chose the ingredients that he felt fit the bill. “My strength is my strong palate,” he said. “I tasted all the individual components and knew that it would work.” He didn’t even have to taste the finished product – he knew, almost like a kind of sixth sense, that it would taste good. And it really did.

This first one, called “Pearls,” was made up of soy curd, black tapioca in brown sugar gelée, a yuzu meringue, and sakura whipped ganache. It glistened on a black granite tile, with small sakura petals framing the dessert. It had enough elements to keep us on our toes – different textures and tastes dancing inside our mouths – but not too much that it overwhelmed us. Like Breakfast at Tiffany’s, it was easily a classic.

The second dessert, aptly named “Audrey,” was simply phenomenal. It had blackberry crémeux, yogurt ice cream, and a balsamic honey drizzle – an unconventional combination that went amazingly well together. The crémeux sat in the middle, covered in chocolate circles, and with the white yogurt ice cream chips surrounding it, it almost resembled a pearl necklace. It would’ve made Our Fair Lady proud.
